Ingredients:
• Choice of vegetables (peppers, asparagus, mushrooms or eggplant)
• Soba noodles
• Sesame oil
• Smoked salt
• Wine
• Green onions
• Sesame seeds
Bake the sliced veggies drizzled with salt and sesame oil until caramelized. Prepare the soba noodles with your choice of sauce. Pour a little wine over the baked veggies. Plate the noodles, veggies and sesame seeds. Garnish with green onions and toasted sesame seeds and add tofu or faux meat.
