After seeing kombucha start to show up on beverage menus and store shelves, I did a little investigating to find out what this drink was all about.
Turns out, kombucha, or “booch” as fans call it, is made by fermenting sugared tea using a culture of bacteria and yeast and sometimes an added fruit flavor. The result is a bubbly, slightly sweet drink with claims of potent probiotic agents to improve gut health.
Available bottled or on tap like beer, the fermenting process does produce some alcohol, but not enough for regulatory agencies to officially declare it an alcoholic beverage.
