Make your own strawberry-chia popsicles for a healthier treat

Quick and healthy strawberry-chia ice pops are a refreshing treat on hot summer days.
• 2 cup frozen unsweetened strawberries, thawed

• 1 tablespoon lemon juice

• 1 15oz can coconut milk

• 1 tablespoon chia seeds

• 1 teaspoon vanilla extract

Prepare six ice pop molds. In a bowl stir together strawberries, lemon juice, coconut milk, chia seeds and vanilla. Let the mixture stand for five minutes so the chia seeds thicken. Evenly divide the mixture among the molds. Place ice pop sticks in each mold. Freeze the pops for about five hours, or overnight, until solid.

Hint: try making with other fruits too.
