Drink in summer with this Peachy Mint Punch

Bring a sweet – and healthy – break to your hot summer nights with this Peachy Mint Punch recipe:

  • 10 ounce bag of frozen peach slices, thawed
  • 3 tablespoons each: fresh lemon juice, honey
  • 1 tablespoon lemon zest
  • 2 cups coconut water
  • 2 cups sparkling water
  • 4 fresh mint sprigs

In a food processor, process peaches, lemon juice, honey and lemon zest until smooth.  Stir together the puree and coconut water in a pitcher and chill. Fill four large glasses with ice, to each add 1 mint sprig and pour over about 3/4 cup of the peach mixture, then top with sparkling water.
